The concept of Souvlaki Fast was born while founder, Roulis, and his wife, Margaret, were on vacation in Thessaloniki, Greece. At the time, Margaret was pregnant and very sick – almost all food made her nauseous and her condition was worse in a country full of unfamiliar flavors. In an attempt to find relief, Roulis took Margaret to a food court in the mall so she would have options. She stumbled upon a souvlaki restaurant that offered individual skewers, salads, rice, and the like. The food was fresh, healthy, fast and the simple flavors appealed to even the most discriminating taste buds.
